High Weald Dairy is based on the farm in the High Weald of Sussex.
A wide range of cheeses are made using sheep, cow, and goat milk, much of it organic and all are available in local Farm Shops and Delicatessens and online at highwealddairy.co.uk.
Typically, it takes up to 10 litres of cow milk to make 1 kg of cheese. Brighton Blue is one of the most popular cheeses, with a gentle, mellow blue flavour, while should you enjoy a buttery cheese then the organic Saint Giles is for you.
